Here’s a healthy recipe called Lonnie’s Oatmeal Cake. Lonnie, the chef, recommends you serve it with love.
- Ingredients
- 1 cup rolled oats 1 1/2 cup flour
- 1 1/2 cup water 1 tsp baking powder
- 1 cup white sugar 1 tsp baking soda
- 1 cup brown sugar 1/2 tsp cinnamon
- 1 tsp vanilla 1/2 tsp salt
- 2 eggs 1 stick butter (softened)
Frosting
- 1/4 cup brown sugar
- 1 stick butter
- 2 tbsp milk
- 1 cup pecans
- 1 cup coconut
Heat oven to 350 degrees Farenheit. Boil water and mix with oats in a bowl. Set aside. Combine other cake ingredients in a separate bowl. Add oatmeal, mix all ingredients together and put into greased oblong pan. Bake for 35- 45 mins until done.
To make frosting: Combine ingredients in a saucepan and heat on medium. Stir until melted and all ingredients are blended together. Spread frosting mixture on cake while still in the pan. Put cake back in the oven and broil until it bubbles. Serve warm or cold.
